Jennifer K. Nelson is a graduate of the University of Minnesota (BS) and University of Wisconsin Stout (MS). Her Internship was with the US Air Force in Washington DC and she was assigned as Chief of Clinical Dietetics at Scott USAF Medical Center in IL. She joined Mayo Clinic and has been in her leadership position for more than 15 years. She leads clinical nutrition efforts for a staff of more than 70 clinical dietitians and 10 dietetic technicians and oversees staffing, strategic and financial planning, and quality improvement. Jennifer is also current Chair of the MN Licensing Board of Dietetics.
In addition to the soon-to-be released book “The Mayo Clinic Diet,” Jennifer contributes articles and strategic direction to www.MayoClinic.com (Food & Nutrition Center). She was co-editor of the James Beard Foundation award-winning "The New Mayo Clinic Cookbook" and the Julia Childs award-winning Mayo Clinic Williams Sonoma Cookbook (which also winner of the 2009 Gourmand World Cookbook Award - Best in Health and Nutrition). She has been a contributing author and reviewer of many Mayo Clinic books, including "Mayo Clinic Healthy Weight for EveryBody." She has also helped develop nutrition materials used by Mayo Health Solutions and their Life Style Coaching program.
